8 reasons to eat frozen vegetables
According to popular belief, you cannot compare fresh vegetables to frozen ones: many people believe that they lose their nutrients and beneficial properties, but is this really the case?
It’s true that the less time and processing that transpires between harvesting and consumption, the more benefits we gain from eating vegetables. Vegetables give us the greatest nutritional value if we eat them as soon as they’re taken from the ground, but the fact is that vegetables are hardly ever eaten straight away, except by people who have their own vegetable garden at home.
With quick freezing, the vegetables reach the consumer’s dinner table in virtually the same condition and with the same quality as when picked. Frozen vegetables are picked at the perfect moment, and very little time passes between harvesting and the quick-freezing process, meaning that all their vitamins and minerals are preserved. In contrast, fresh vegetables are transported to market after harvesting and the decay and oxidation process is much quicker, often involving the loss of 10 to 50% of their nutrients. For this reason, some frozen vegetables have more vitamins and nutrients than fresh ones.

8. They aren’t seasonal, so can be consumed all year round without having to wait for their harvest season.
